Coffee Cake & Valentines

I was caught off guard when I got the note from our preschool about Valentine’s Day.  Our boys only attend 3 days a week and wouldn’t be there for the Valentine’s party so  I thought we were off the hook.  But alas, each kid was supposed to bring Valentine cards regardless of whether or not they would be there on Friday.  So our total was 44, which I know is lightweight compared to some of you with older kids in elementary school.  But still.  Last year we made 3 so this seemed like a big jump!

Yesterday morning, I made a coffee cake for the four of us and we exchanged our family Valentines.

Here’s the recipe for the coffee cake.  It’s about as simple as you can get and it’s a staple at our house.  Originally found here.
Preheat oven to 350.

Ingredients:
1 stick butter
1 cup brown sugar
heaping tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 cup milk

In a large bowl crumble all the ingredients together.   Scoop out 1/2 cup+ of this for the topping.

Add to the large bowl:
1 egg
1/2c milk
Stir combine.

Pour into a greased 8″ or 9″ square pan and sprinkle with the saved crumb topping.  Bake at 350 degrees for 25-30 min.

Cutting into heart shape optional.  I got carried away!
